But here I go; If I have a 7.5 deck and I want 7.75 trucks, will they work? Like, will it fit?

That's like an 1/8" difference on each side, probably won't hurt.

I really dont think it matters. My trucks on my of my boards are wider than the board is and it doesnt matter unless you really like primo tricks.

wont matter. Most trucks are made for a range like 7.5 - 7.75. It wnt matter bottom line
